A family matter
«Behin batean, hola hasten omen da ipuin bat...»
After having proven themselves for twenty years in a first restaurant, Marie-Louise and Émile Ithurria bought in 1962, in the heart of Aïnhoa, the farm "Alaborda" to create a business there to which they gave their surname "Ithurria".
Their daughter Maritchu and their son-in-law, Maurice Isabal, who brings his creativity to the classicism of the house repertoire which he sprinkles with a flood of original ideas to establish the reputation of the house. In 1990, their two sons, Stéphane in the dining room and Xavier in the kitchen, assisted their parents before "taking over" in hand in 2007. Stephane's sons, Louis in pastry and Martin in the kitchen, joined the house in 2018 and 2021 after having made their tour of France and are now ready to write a new page in the family history.

With airs of youth and modernity, Xavier's remarkably mastered cuisine is faithful to the house tradition: the market being law, the products are always in season!
Its menu is a festival of original ideas where fish from the coast rub shoulders with all the gourmet treasures of the Basque-Béarnais repertoire, all concluded with desserts of rare elegance. In the dining room, Stéphane testifies to the talented complicity that binds him to his brother when he comments on his menu and lets his passion for wine burst forth when he presents the treasures of his exceptional cellar.
